Maita brings Nikkei cooking - Peruvian by way of Japan - to Haarlem's Lange Veerstraat, across a cevicheria, a sushi bar and a robata grill. The three sections give the menu its shape: raw and citrus-sharp at one end, charcoal at the other, sushi in between, with the bold colour and flavour that Nikkei is built on. It is designed for sharing, three or four dishes a person, and the kitchen sequences the order for you rather than sending everything at once. Vegetarian and allergen-aware options run through the menu. A full evening comes to around EUR 60 a head.
