The read// why locals go

Haarlemsche Frites is a fritkot on the Botermarkt where Belgian-style frites are fried twice in beef fat and handed over in a paper cone with house-made sauces. There is no dining room and no pretence of one: you queue, you take the cone, you eat standing up on the square. At around EUR 5 it is the cheapest good meal in the old centre, and the lunchtime line is the local verdict on that. Haarlem defends it fiercely as the best frites in Noord-Holland, which is the kind of claim that only survives if the frying is genuinely right.
