Txepetxa on Calle de la Pescadería has spent decades doing one thing: anchovies from the Cantabrian coast, served around twenty different ways. Each pintxo is the same cured fillet on bread under a different topping — sea urchin, papaya, spider crab, olive, onion — so an order becomes a run through the same ingredient's range rather than a survey of a menu. There is no equivalent anywhere, and the single-mindedness is the reason to go. Around €11 for several. A small, tiled, unhurried bar in the Parte Vieja, best approached by ordering three or four and comparing.
