Two tortillas are made each day and no more; when they are gone the answer is come back tomorrow, which is why a queue forms well before each sitting and why regulars know to put their name down early. Beyond the tortilla the offer is deliberately short — tomato salad, padrón peppers, txuleta — and the room is too small for anyone to linger. Around €14 a head. A Basque institution that locals guard, and that rewards planning far more than luck.
