The building was a factory and still reads as one — steel, brick and a hall of counters instead of a dining room. Norwegian specialities sit alongside kitchens cooking from everywhere else, so a group can eat completely differently and still share a table, and vegetarians are covered properly rather than grudgingly. It is the most efficient introduction to what Norway actually eats, cheese and cured meat and fish included, without committing to a full sit-down meal. Oslo fills it at weekends and treats it as a destination in its own right.
