Yoshino Sushi keeps to oshi-zushi — the pressed, boxed sushi that Osaka was making long before Tokyo's nigiri existed. The method is closer to preserving than to slicing: cured fish and seasoned rice packed into a wooden mould, pressed, then cut into neat blocks, which is how sushi worked before refrigeration and speed rewrote it. The mackerel version is the one to order, firm and vinegared and considerably more assertive than anything raw. Around ¥1,800. Minami-Semba is a working part of central Osaka, and the restaurant sits in it as a piece of the city's culinary record rather than a revival of one.
