Abu Hassan has been grinding hummus from a small room in Jaffa, at the southern end of Tel Aviv, since the 1950s — and the queue has never gone away. The menu is barely a menu: hummus, warm and smooth, dressed with olive oil and paprika, eaten with bread rather than cutlery. Around ₪35 buys the plate that most people in Israel would name if forced to choose one. There is no décor to speak of and no interest in acquiring any; the room exists to turn out bowls quickly for people who came only for that. Arrive expecting to wait, and expecting the wait to be justified.
