Few restaurants can claim to have invented a dish that conquered the world; Moti Mahal is credited with two. Butter chicken and dal makhani were both created in this kitchen after Partition, when the founders brought their tandoor cooking from Peshawar to Delhi, and the Daryaganj original has been open since 1947. North Indian food as most of the world now knows it was largely codified here. The room is old-school and the tandoor still does the heavy lifting; vegetarian dishes are a proper part of the menu, not a concession. Around ₹500 a head. Whatever else you eat in Delhi, this is where a good deal of it started.
