Karim's has been cooking Mughlai food in Gali Kababian, the lane running off Jama Masjid, since 1913 — founded by a family with royal-kitchen lineage and still run as a family business more than a century later. The cuisine is Delhi's imperial inheritance: slow-cooked mutton, rich gravies, breads from a tandoor working continuously through service. The setting is a courtyard of small dining rooms behind the mosque, loud and cramped and entirely unbothered about it. Around ₹350 a head, which for a restaurant of this reputation is remarkably little. It is the single most-cited address in Old Delhi for a reason, and the queue at the mouth of the lane proves it nightly.
