La Faim des Haricots has fed Toulouse vegetarian since 2001, an all-you-can-eat buffet of homemade salads, tarts and hot dishes. The first one opened in Blagnac in 1996, in a region that runs on duck and foie gras, which made a meat-free dining room something close to heresy. The idea was never a lecture; it was a table where you eat as much as you like, at your own pace. The spread runs to a dozen composed salads — courgette curry, hummus, sesame green beans — savoury tarts that change daily, a plat du jour such as a house curry or bhaji, soup in winter, and a dessert counter with carrot cake and crumble. Everything is made in-house, and vegan plates sit on every buffet. There is a terrace on the rue du Puits-Vert side.
