La Puerta Falsa has been open since 1816, making it the oldest restaurant in Bogotá — a traditional Colombian counter a few steps from the Plaza Mayor. The menu has barely moved in two centuries. Ajiaco santafereño, the thick capital-city soup of chicken, three kinds of potato and the herb guascas, is the order; the tamales follow recipes the kitchen has declined to modernise. Around 18,000 pesos buys the whole ritual.
