Bodega de la Ardosa has poured vermouth on Calle de Colon in Madrid since 1892, and it still works the way a bodega should. Barrels and old advertising line the walls, the crowd stands rather than sits, and it goes three deep when the barrio comes out. The food is bodega food, small plates built to go with a drink, and you can eat well for around EUR 14. It is one of the few surviving Madrid bodegas of its era still in daily use by the people who live nearby, which gives it a texture no reconstruction manages. Best approached as a stop rather than a destination: one round standing, then onward into Malasana.
