Kiko Martins's A Cevicheria brings ceviche and raw fish to Príncipe Real, in one of Lisbon's busiest small rooms. The cooking is Portuguese in instinct and ceviche in method — creative rather than orthodox, and built for a bar-height, high-volume room that never quite calms down. No reservations are taken, so the queue outside is part of the arrangement. Mains run around €22. It is a loud, compressed, slightly chaotic way to eat very good seafood, and Lisbon has decided it prefers it that way.
