El Tío Mario has grilled anticuchos from the same Barranco corner for thirty years. Anticuchos — beef heart skewered and cooked over charcoal — are the whole proposition, and Lima gets them here for around 25 soles, standing up, late, usually after something else. The cart is an institution on Avenida Grau: it opens for the evening and the neighbourhood arrives on the way home from concerts and bars. This is street food in the literal sense, and the most direct version of how Lima eats that a visitor is likely to find.
