Gys is entirely plant-based and entirely gluten-free — a combination almost nobody attempts — and it manages it on Utrecht's Voorstraat. Ingredients are organic and grown locally where the kitchen can manage it, and the food is built to be good first and virtuous second, at around €10 a plate, running from lunch through aperitivo to dinner. There are two Utrecht addresses: this one in the busy historic centre, and a second on the Amsterdamsestraatweg with a large garden terrace. For anyone eating vegan, or navigating gluten, it removes the usual negotiation entirely — the whole menu is already safe.
