Ijsselhuis
Gouda, Netherlands
The read// why locals go
IJsselhuis occupies an old skippers' waiting room at Gouda's museum harbour, cooking vegetable-led seasonal food with a terrace over the water. The building did real work once: bargemen waited here on the water and the bridges before the harbour became a museum of itself. The kitchen, under Herman Winkelman, puts vegetables at the centre rather than at the side — a short changing menu offering a meat and a vegetarian option at each course, drawn from local and seasonal supply — with courses running from about €8.50 to €24.50, so you build the meal you want. The drinks list follows the same logic: Dutch breweries, Belgian gueuze, wine and cider chosen rather than merely stocked. Walk-ins welcome.
