La Sqala occupies an 18th-century bastion on Boulevard des Almohades, serving tagine, bastilla and couscous inside the old sea walls. The garden is the reason people come back — enclosed by the fortification's stonework, planted heavily, and quiet in a way that central Casablanca almost never is. The kitchen stays traditional rather than clever: slow-cooked tagines, the layered sweet-savoury bastilla, couscous done properly, at around 90 dirhams a head. It draws the city's professional class and holds them far longer than they planned, which is what a walled garden tends to do to an afternoon.
