The restraint is the entire proposition: one dough, one wood oven, two options, about €8 either way. You take a ticket, wait on the street with everyone else, sit wherever there is space and pay in cash. Nothing has been softened for the visitors who now make up much of the queue — the tiles, the shouted orders and the total absence of a wine list are the same as they were when this was simply the pizzeria the surrounding streets used. It remains the reference point every other Neapolitan pizzeria is measured against.
