   Diporto is a cellar taverna off Theatrou near the Athens central market, with no sign above the door and no menu inside. You go down the steps, sit at a shared table, and are told what there is. Usually that means chickpeas cooked overnight, bean soup, salted fish, and wine drawn from the barrels stacked against the wall. Lunch, around €14, and a room that fills with market porters, office workers and the occasional pilgrim. It has run this way since the 1950s and has declined every opportunity to modernise. Ordering is not really required; disagreeing with what arrives is not encouraged.

   Karamanlidika tou Fani

   Part delicatessen, part meze restaurant, Karamanlidika tou Fani keeps alive the food of the Karamanlides, the Anatolian Greeks of Athens. They resettled here after 1922 and brought their cured meats and cheeses with them. You eat at tables surrounded by the counter's stock: pastourma, soutzouki, smoked and salted things, cheeses that never appear on a standard taverna menu. Around €22 a head, on Sokratous near the central market. Staff will explain everything and cut you samples before you commit. One of the few restaurants in Athens where the point is a specific history rather than a general idea of Greek food.

   A taverna on Plateia Theatrou that has fed this corner of Athens for the better part of a century. Barrel wine, Greek classics cooked to unchanged recipes, and live music at weekends, when the room turns into something closer to a party than a dinner service. Around €18 a head, evenings only. The square outside is unglamorous — this is working Athens, not Plaka — which is exactly why the taverna kept its character while prettier neighbourhoods lost theirs. Go late, go with a group, and expect to still be there when the musicians pack up.

   Maniátiko

   Maniátiko cooks the food of the Mani, the stony middle peninsula of the Peloponnese, from an address on Kydathinaion in the middle of Plaka. Mani food is shaped by hard country: cured and slow-cooked meats, wild greens, hard sheep's cheeses, olive oil doing most of the heavy lifting. Around €24 a head. Plaka is not where Athenians normally look for a serious meal, which makes a kitchen with an actual regional argument stand out here more than it would anywhere else in the city. Ask what the Mani version of a dish is before defaulting to the familiar one.

   Avissinia looks out over Plateia Avissinias, the square at the heart of Monastiraki's flea market where Athens sells its antiques. Second-hand furniture spills across it, and the kitchen cooks Greek meze meant to be ordered across the table and lingered over; expect around €20 a head and considerably more time than you planned to spend. Tables outside put you level with the market stalls. Sunday lunch is the ritual here, when the square is fullest and nobody leaves quickly. One of the few addresses in Monastiraki that the neighbourhood still uses itself rather than surrendering to the tourist trade.

   Terrace: There is outdoor seating for warmer days.
