Mian Guan pulls its noodles by hand on Rue de Belleville, in the middle of one of the busiest Chinese food streets in Paris. The dough is worked on site, and it shows in the bowls: hand-pulled noodle soup with pork, spicy beef noodles, and a plate of noodles in a spicy lacquered duck sauce that gets singled out more than anything else on the card. Dumplings and Cantonese rice fill out the rest. Dishes run roughly €10 to €20, which is why the room fills up with students, large groups and people who have wandered up from Belleville métro. Vegetarians get more than a token line, with vegetable noodles and grilled tofu to start. The floor is step-free throughout.
