L'Entrecôte has served Bordeaux a single menu since 1966: walnut salad, steak in a secret sauce, and as many chips as you can manage. There is nothing to choose. You sit down on the Cours du 30 Juillet, the salad arrives, then the entrecôte under a sauce nobody has successfully reverse-engineered, and then the second serving, which is the part people describe afterwards. Pommes allumettes throughout, around €22 for the lot. The queue starts before the doors open and never shortens, because Bordelais who were brought here as children now bring their own. One menu, executed the same way for sixty years.
