Koshary Abou Tarek has served Cairo one dish since 1950: koshary, the layered plate of rice, lentils, pasta and spiced tomato sauce. The four-storey dining room on Champollion Street runs on a single-minded system — you sit, a bowl arrives, you add the vinegar and chilli yourself, and the table has turned over before you have finished thinking about it. Portions land around 25 EGP, which is why the queue at street level holds office workers, students and families in equal number. Cairenes come back several times a week, and the kitchen has never needed a menu longer than one item to stay full. It is the reference point every other koshary counter in the city gets measured against.
