Chez Léon has served moules-frites on the Rue des Bouchers in Brussels since 1893, long enough to have become the city's benchmark for the dish. Successive generations of the same family expanded it through a row of old houses until it took over most of the lane. The order is the same as it has always been: a black pot of mussels, cooked one of a dozen ways, with frites alongside, at around 22 euros. The Rue des Bouchers is Brussels at its most theatrical, narrow and lit and loud with restaurant touts, and Léon is the house that earned its place there rather than inherited it. Tables run outside along the cobbles.
