KUBA brings Pan-African cooking together with Scottish seasonal produce inside Edinburgh Printmakers on Dundee Street. Chef Babatunde Abifarin and co-founders Gaelle Isimbi and Sarah Norman built the place around a simple idea: indigenous African ingredients deserve the same treatment as anything grown in the Lothians, and the two traditions have more in common than anyone assumes. The menu moves between a plant-based fry-up, baked sweet potato with chickpea and mint, and an FLT baguette, with vegan and vegetarian cooking running throughout rather than tacked on. The room is full of natural light and there is outdoor seating, plus speciality teas and Rwandan coffees alongside the food. The name comes from Kuba cloth, the Congolese textile whose geometry sits surprisingly close to tartan.
