Kanapa, on Andriyivsky Descent, is the restaurant that reframed Ukrainian cooking for a younger Kyiv — traditional ingredients, contemporary plates. Chef Dmytro Borisov built the menu out of buckwheat, beets, salo and fermented vegetables — the ordinary Ukrainian pantry — and treated it as material worth technique rather than nostalgia. That shift did a lot to change how the city talks about its own food. Mains are around 280 hryvnia. The address is the steep cobbled descent linking Podil to the upper town, an appropriate setting for a project this conscious of national identity. An evening restaurant, and one to book.
