   Asador La Garnacha cooks over live fire on Calle Clara Campoamor, in the Actur district north of the Ebro and well away from Zaragoza's tapas circuit. The kitchen is built around the grill: cuts of meat finished over embers, the technique Aragonese asadores have leaned on for generations, handled here with rather more precision than the format usually gets. There is a menú del día for weekday lunches in the neighbourhood, a full carta, and a longer tasting menu for evenings that run late. It is a single-address house — no second branch, no city-centre outpost trading on the name. What fills it instead are local families and office tables, which is the most reliable sign an asador is doing its job.
