   Café In de Vlaminck is a Dutch brown café on Fnidsen, one of the oldest streets in the Alkmaar old town. The bruin café is a category rather than a style: decades of tobacco and time on the woodwork, a bar you can stand at alone without explanation, beer and jenever taken seriously and food kept firmly secondary. Whatever crosses the bar here runs under €10. Fnidsen is a narrow, low-built lane a few minutes from the cheese market square, which keeps the room closer to a local's afternoon than the Friday tourist tide outside.

   Eetcafé Het Waagplein stands beside the Waag on Alkmaar's cheese-market square, serving plain Dutch food from breakfast onwards. The eetcafé is the Netherlands' most useful format: a café that feeds you properly, at café prices, without ceremony — here around €13. Its position is unbeatable on a Friday in season, when the cheese carriers work the square in their coloured straw hats and the terrace becomes a grandstand. The rest of the week it reverts to what it really is, a working town café next to a 16th-century weigh house.
