That means tilapia, omena, the small dried lake fish eaten by the handful, stiff maize meal and traditional greens, cooked the way they are cooked around Lake Victoria rather than the way a city restaurant might soften them.     Mama Oliech

    Mama Oliech built a Nairobi reputation on a single dish: whole fried tilapia, served with stiff maize meal and greens, the fish arriving at the table roughly the size of the plate. Everything else on the menu sits in its shadow. The restaurant works out of a converted house off the ring road between Kilimani and Lavington, with a garden that fills at midday, and a plate lands at around KES 600. Its long-standing appeal is the cross-section it draws, with politicians and neighbourhood families eating the same fish at neighbouring tables.

    Nyama Mama, at The Hub on Karen Road, puts Kenyan home cooking into a contemporary diner format: maize meal, braised collard greens and grilled meat plated with more design than a traditional kitchen would bother with, aimed at a younger Nairobi crowd. The reworking is real rather than cosmetic, taking dishes usually eaten at home and giving them a room to be ordered in. Main courses come in at about KES 1200, lunch and dinner both, and the result reads as a version of Kenyan food written for the city its customers actually live in.

    Carnivore has grilled over a central charcoal pit on Langata Road since 1980, carving meat from Maasai swords straight onto cast-iron plates until you lower the flag on the table to stop it. Alongside the standard cuts come farmed ostrich and crocodile, which is the part that gives the place its name and its reputation. It runs at around KES 2500 a head, making it an occasion rather than an everyday meal, and Nairobi families have treated it that way for over four decades. The format is theatrical, but the fire and the carving are real work.
