   Osteria dello Zingaro

   A few steps from Piazza Duomo, down a narrow borgo, Osteria dello Zingaro keeps a handful of tables and a firmly Parmigiana menu. Paolo Bruni opened it in 2004 and the cooking has stayed where it started: salumi from the province, egg pasta rolled in the house — tortelli filled with pumpkin, or with spinach and ricotta — and second courses that tell you who eats here, trippa alla parmigiana and beef and horse cooked over the grill. Those last two are the tell; visitors rarely order them, Parma does. The room is small, rustic and informal, with enough seats to fill up on regulars alone, so a table is worth arranging ahead.

   Trattoria del Grillo

   Out where Parma's streets loosen into the Vigatto countryside, Trattoria del Grillo has been cooking the city's own kitchen since 1960. The card stays inside the Parmigiana canon — cured meats from the surrounding hills, filled pasta rolled by hand, slow-cooked meats — and the prices stay where a trattoria's belong, with dishes running from roughly six to nineteen euros. This is a proper sit-down room with tables worth booking rather than a counter to queue at, though a takeaway service exists for the same food eaten at home. The recognition it has collected is local rather than national: the kitchen won a contest broadcast on 12tvparma, the city's own channel, which is about the right scale of fame for a place like this.
