   Kéhli Vendéglő has been feeding Óbuda since the end of the nineteenth century, and the writer Gyula Krúdy ate here often enough to put it into his books. It sits on a quiet Mókus utca corner well north of the tourist centre, in a low old building with a garden that opens in summer, and it cooks the traditional Hungarian repertoire without apology: bone marrow on toast, freshwater fish soup, stuffed cabbage, goulash. Long tables, live music, portions sized for people who worked outdoors. Óbuda was a separate town before Budapest absorbed it, and Kéhli is one of the few places where that older, slower version of the city is still legible at dinner.

   Kárpátia

   Kárpátia has been serving Hungarian food beside Ferenciek tere since the 1870s, in one of the most elaborately decorated dining rooms in Budapest. The interior is the draw before the menu is: painted neo-Gothic vaulting, stained glass and dark carved wood, restored rather than reinvented. The kitchen keeps to the classical Hungarian repertoire, braises and freshwater fish and the dishes that predate any modern reinterpretation, while a band plays through the evening as one has for well over a century. It is formal in a way few Budapest restaurants still are. Locals use it for anniversaries; visitors use it to see what a grand Hungarian restaurant looked like before the twentieth century rearranged the city.

   Menza

   Menza is named after the socialist-era works canteen and plays the joke straight, with 1970s Hungarian design and updated canteen cooking on Liszt Ferenc tér in Budapest. The dining room is a deliberate period piece, orange and brown, moulded plastic, wallpaper your grandmother would recognise, and the menu does the same thing with food, taking the dishes of that era and cooking them better than they were ever cooked then: stews, stuffed peppers, the old cottage cheese desserts. The terrace faces one of the busiest pedestrian squares in the city, which makes it a fine place to sit and watch, and prices stay low enough that young locals treat it as a habit rather than an outing.

   Hungarian Főzelék

   Főzelékfaló Ételbár

   Főzelékfaló Ételbár exists to serve one Hungarian dish properly: főzelék, the thick vegetable stew that has fed Budapest lunch tables for generations. The counter runs through the day's pots, spinach, squash, lentil, bean, and you point at what you want, add something fried on top if you are hungry, and eat it at a stand-up table. Portions are large and prices are among the lowest in the district, which is why the queue at midday is made of people who work on Október 6. utca rather than anyone on holiday. Főzelék rarely reaches tourist menus because it is home food, not restaurant food. This is the easiest place in central Budapest to try it as Hungarians eat it.
