Shiki Menya makes about 150 bowls of ramen a day in Bridgeland, then stops. When the noodles run out, the day is over. That number is not scarcity marketing, it is arithmetic: the pork bone broth simmers past twenty hours and the noodles are rolled in house, and there is only so much of either a small kitchen can do properly before quality starts to slide. So the shop caps itself and closes. Seating is first-come, first-served, no reservations, no negotiating — a lunch-only counter in a residential pocket northeast of downtown where the queue forms before the doors open. There is a sibling snack bar next door doing sandos, curry and udon. Single-minded, self-limiting, and completely uninterested in being anything else.
