On Rue Roture in Outremeuse, Métisses cooks Senegalese food — acras, moambe chicken, duck with mango — from a kitchen its owner runs herself. Ndeye Mour N'diaye is the chef, and that shows in a card reading like one cook's repertoire rather than a survey of a whole continent. Moambe, the palm-nut stew at the centre of so much West and Central African cooking, sits alongside fritters and fruit-sweetened duck. There is a terrace for the evenings that earn one. Outremeuse has never been Liège's polished half, which is part of why its restaurants are the ones locals name first — and why a single address on Roture, with no second branch anywhere, is enough.
