   Restaurant De Mijn sits inside C-Mine, the Genk colliery turned cultural campus, cooking contemporary Limburgish food among the old pit buildings. C-Mine is the most striking thing in the city: winding towers, a shaft complex and machine halls converted into a design school, cinema and exhibition spaces without erasing what they once were. The restaurant works with that setting rather than against it, taking Limburg's agricultural produce — this is orchard and market-garden country — into a contemporary kitchen with a seasonal menu and mains around €24. The crowd is the one the site draws: people who work in the complex, audiences either side of an event, families making a day of it.

   Italian Pizza

   Pizzeria Rocco Cagliostro

   On Onderwijslaan in Waterschei, Rocco Cagliostro fires his pizzas in a wood oven and puts his own name over the door. The kitchen works from Calabria, the region at the toe of Italy, and it shows in how the dough is handled — slowly, unhurried, then given the char that only a wood oven leaves. Rocco has taken regional prizes for his pizza-making, though you would not guess it from the room, which is a plain neighbourhood pizzeria rather than a place trading on its trophies. There is one address and no second branch. Eat in, or carry a box home through the old mining quarter.

   Italian

   Il Fornello

   Il Fornello started in a basement in Oud-Winterslag in 2003 and moved across the street six years later, once there were more guests than room. It is still the Muto-Amatobene family's restaurant: a pizzaiolo who carries his craft from Calabria and learned it in Italy, a chef with roots in Abruzzo, and an open kitchen that lets you watch both of them work. Pizza and pasta are made in-house, with much of the pantry brought in from Italy. Sixty-five seats inside and a terrace roughly as large mean it never feels like a queue-and-go operation, and there is only ever this one address — no second Fornello anywhere.
