De Halve Maan is the last working family brewery inside Bruges, brewing on the Walplein since 1856 and serving its beer in the brasserie beside the copper. Six generations have kept it in the old town, to the point that the brewery pipes finished beer under the streets to a bottling plant outside the centre rather than move out. You can tour the brewhouse, then eat Flemish brasserie cooking with a beer that travelled a few metres to reach you. Plates sit around 18 euros. The courtyard terrace is one of the better places in the city to spend a long afternoon, and this remains a working brewery rather than a monument to one.
